5 Minute Gluten Free Pesto Pasta with Sautéed Mushrooms

Super tasty, gluten free, just boil some water and have a couple pantry/freezer essentials laying around and it literally takes 5 minutes (once the water is boiling). While not exactly authentic this is my go to when we're late home from swimming lessons for the girls and they're both HANGRY and I failed to plan ahead!

Ingredients

  • 1 package rice ramen noodles (Lotus Foods Rice Ramen saves the day!)
  • 4 tsp frozen minced garlic (TJ's has pre-minced and frozen garlic, if you've got an extra minute you can mince your own 🙂
  • 4 tsp frozen minced basil (TJ's to the rescue again, same as the garlic, I like a little fresh basil on top)
  • 1 tbsp olive oil
  • 1 lb mushrooms
  • 1/4 cup grated parmesan (optional)
  • 1 tbsp fresh basil leaves, slivered (optional)
  • 1/4 cup pine nuts (optional)

Instructions

  • Bring water to a boil and heat a skillet over medium high heat.
  • Chop the mushrooms (and fresh basil if you're using it).
  • Cook the pasta (literally 4 minutes).
  • Sauté the mushrooms with a little olive oil, salt and pepper.
  • Drain pasta and toss with olive oil, frozen garlic, frozen basil, and salt and pepper. Dish plates and top with some mushrooms!
  • (Optional) Top with some grated parmesan, fresh basil, and pine nuts!I

Notes

If we're being honest, even the mushrooms are optional when they're that hungry and bed time is looming! This gluten free pesto pasta may not my finest cuisine but it is a simple delicious meal that is about as fast I can make, and so well received!
