Cumin-Cilantro Beans and Rice
Super simple staple in our house, goes with almost anything and full of good clean healthy protein.
Servings 6
Ingredients
- 1 cup whole grain brown rice (substitute what you have but alter the cooking time according to the directions)
- 2 cups vegetable stock (chicken stock works just as well if you aren't going for vegetarian)
- 1 tbsp butter
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1 1/2 cups cooked black beans (can make from scratch or shhhh... to save time use canned)
- 1/2 cup chopped cilantro (half for mixing and half for garnishing fresh)
Instructions
- Add rice, stock, and butter to small pot. (NB: check your rice for cooking instructions if amounts of liquid and cooking times are different, use those just substituting stock for the water.)
- Put over medium high heat until boiling.
- Stir and reduce heat to low. Let simmer for 45 - 50 minutes.
- Remove rice from heat and fluff with a fork and let sit covered for 5 minutes.
- Put rice, beans, salt, cumin, and half the chopped cilantro in a bowl and stir together. Feel free to adjust salt to your liking.
- Serve with a little more cilantro on top!
Notes
For the "I have no food and need to feed the kids NOW!" version use the super convenient but a little guilty frozen microwave organic rice and a can of organic black beans, rinsed... 3 minutes in the microwave mix and in 4 minutes you have a solid side... not saying that's ever happened to me but just in case!
