Flipping Delicious Kale Quinoa Salad

Super simple, gluten free, power salad... oh, and flipping delicious (quinoa secrets below...).

Ingredients

Flipping Delicious Quinoa

  • 1 cup quinoa
  • 2 cups vegetable stock (for cooking your quinoa)
  • 1/4 tsp salt

Massaged Kale

Finish

  • 1/4 cup goat cheese
  • 2 each ripe avocado
  • 10 each cherries

Instructions

Flipping Delicious Quinoa

  • Okay, so not a huge secret but SO tasty. Cook your quinoa according to instructions, substituting vegetable stock for the water and adding 1/4 tsp salt.

Massaged Kale

  • Rinse and dry your kale and cut into thin slices and place into a large bowl.
  • Next, add salad dressing to the kale, I use probably 2 - 3 tbsp for 4 cups of kale... totally up to you.
  • Now, gently massage the salad dressing into the kale, making sure to caress every piece. This ensures the kale is well dressed and actually softens the texture a bit, don't worry, it can stand up to even fairly aggressive massage!

Finish

  • Okay, now for the fun, layering it all on! Place a bed of the massaged kale, then top with the quinoa. Add a small drizzle of the salad dressing over the top if you wish.
  • Top with chunks of avocado, crumbles of goat cheese and slices of cherry (pitted of course) and voila! Enjoy!

Notes

Okay, obviously this can go many ways, most ingredients you have around are  great. I love the creamy avocado, a little tang in the cheese, and the sweet Northwest cherries as a complement to the solid base of the massaged kale quinoa salad!
