Lime Cilantro Coleslaw

Sweet, tart, and salt play off of each other beautifully. Light and refreshing coleslaw for just eating... Or with some grilled pork, or fish tacos... Lime, Cilantro, and a little mayo (just enough, I promise) make up the dressing.

Ingredients

  • 1/2 head red cabbage
  • 1 cup cilantro, chopped
  • 2 tbsp mayonaise
  • 2 tbsp agave nectar
  • 1/2 tsp salt (plus more to taste)
  • 1/4 cup fresh lime juice (about 2 - 3 limes worth)

Instructions

  • Chop the cabbage into thin slices about 1 - 2 inches long.
  • Add cilantro, mayo, agave, salt, and lime juice. Stir thoroughly to combine and coat everything with the dressing.
  • Add a little fresh pepper and adjust seasoning if necessary (will repeat after it sits if you have time).
  • Refrigerate and let sit for about 2 hours.
  • Stir and taste again, adjust if necessary to your tastes. Serve and enjoy!

Notes

I stole the basic idea for this coleslaw from my sister, adjusted a bit and here we are (thanks Indra!). I use it with a ton of things but it's my go to for grilled pork (especially a mojo) and fish tacos.
