Portobello Tacos Loaded with Goodies

Super simple homemade mushroom tacos, bursting with fresh goodies. Best served with loads of fresh topping choices like cilantro, avocado, lettuce, tomato, onions, whatever you have around and improvise from there!

Ingredients

  • 1 batch Homemade Taco Seasoning
  • 1/4 cup water (optional)
  • 1 lb portobello mushrooms (you can substitute other mushrooms or some ground beef if you prefer)
  • 1 tbsp grapeseed oil (or other high heat oil you like)
  • 1/2 cup cilantro, chopped
  • 1 each avocado, ripe and diced
  • 1/4 cup onion, chopped (red, sweet, or yellow, whatever floats your boat!)
  • 1 cup lettuce, chopped
  • 8 each tortillas (Corn are more traditional but pick your favorite!)
  • 4 oz queso fresco (optional but recommended!)
  • 1 each jalapeno (optional)
  • 1 batch pickled onions (optional)
  • 1 batch salsa fresca (optional)
  • 1 each lime, cut into wedges (optional)

Instructions

  • Chop or dice all of your toppings: cilantro, avocado, onion, lettuce, etc. Set aside in individual containers or all on a bigger plate.
  • Chop your mushrooms into easy bite sizes.
  • Heat a skillet over medium high heat.
  • Add oil to the pan and swirl.
  • Cook your mushrooms until they start to sweat, aka let out some moisture (and/or brown your beef).
  • Add homemade taco seasoning to the pan, and stir to mix. Optionally if the mixture is too dry to mix well you can add a little water.
  • Continue cooking until the moisture has evaporated and everything is combined then remove from heat.
  • Meanwhile, warm your tortillas. They can heat individually in a dry pan, singe lightly over a gas burner, etc.
  • Build tacos with all those delicious toppings and serve or have everyone build their own!

Notes

You can pretty much use any type of mushroom for this recipe, pick your favorite and enjoy! Add some pickled onions for a delicious punch of flavor! These mushroom tacos will not disappoint!
