Roasted Broccoli with Garlic and Capers

Quick roasted broccoli meld with the deep flavors of the garlic and capers then finished with a bright squeeze of lemon juice.

Ingredients

  • 1 bunch broccoli (usually 2-3 decent sized stems)
  • 1 tbsp olive oil
  • 3 cloves minced garlic (okay, sometimes I add a bit more!)
  • 2 tbsp capers (the smaller ones, not the large caper berries)
  • 1 each lemon (cut in wedges for finishing)

Instructions

  • Preheat oven to 450 degrees.
  • Cut the broccoli florets into medium slices.
  • In a medium bowl drizzle olive oil over sliced broccoli. Add minced garlic and capers.
  • Salt and pepper to taste then stir to combine all the ingredients.
  • Spread out over sheet pan and roast in the oven until you have a little char on the ends and the stems are tender but still with a little crunch. About 15 - 20 minutes depending on how thick your slices are.
  • Squeeze fresh lemon over and serve with extra wedges of lemon as needed.
