Seared Apricots with Candied Bacon

Apricots... Pan seared (or grilled a la my grilled peaches)... a drizzle of balsamic vinegar and red wine reduction sauce... a little thyme... oh, and the candied bacon. Yaaaaasssss.

Balsamic and Red Wine Reduction

  • 1/4 cup balsamic vinegar
  • 1/4 cup red wine
  • 2 tbsp agave nectar
  • 2 sprigs fresh thyme

Quick Candied Bacon (Optional)

  • 2 strips cooked bacon (or cook it before finishing this portion)
  • 1 tbsp agave nectar
  • 1 tsp butter

Seared Apricots

  • 4 each apricots
  • 1 tsp fresh thyme leaves
  • 1 tsp butter


Balsamic Reduction

  • Heat a small sauce pan over medium heat.
  • Add balsamic vinegar, red wine, agave nectar, and sprigs of thyme to pan.
  • Cook, stirring occasionally until reduced by half, about 10 - 12 minutes. Remove from heat.

Quick Candied Bacon (Optional)

  • Chop your cooked bacon up into small pieces and put in a small bowl. Add agave nectar and toss.
  • Heat a skillet over medium heat.
  • Add butter and melt, swirl to coat pan.
  • Add the agave covered bacon to the pan, it will sizzle a bit!
  • Shake the pan or stir frequently until bacon is crispy and agave has caramelized a bit about 1 - 2 minutes. Set aside.

Seared Apricots

  • Cut each apricot in half and remove pit.
  • In the skillet you just used for the bacon, over medium heat, add the butter and melt.
  • Place the apricots cut side down in the pan and sear about 1 - 1 1/2 minutes. Turn them and sear the skin side another 1 - 1 1/2 minutes. Remove from heat.
  • Place 2 halves of seared apricot on a plate, drizzle with a bit of the reduction, sprinkle with some of the candied bacon pieces, finish with a bit of the thyme leaves and enjoy!


Super easy and quick way to make a mind blowing and healthy-ish dessert to impress your friends... or just eat by yourself! Just as good with peaches, nectarines, etc. and if meat isn't your thing, just skip the candied bacon! These seared apricots bring the heat!
