Sweet and Tart Roasted Cranberries

Delicious combination of lightly sweetened roasted cranberries, tart fresh cranberries, yummy orange liqueur, and a bright hit of orange zest!

Ingredients

Roasted Cranberries

  • 8 oz cranberries
  • 2 tbsp sugar
  • 1 tbsp Cointreau (or other orange liqueur)

Sweetened Roasted Cranberries

  • 1/2 cup fresh squeezed orange juice (juice from one orange, get zest first before juicing)
  • 1/4 cup sugar
  • 1 tbsp agave syrup
  • 1/4 cup cointreau

Sweet and Tart Roasted Cranberries

  • 4 oz fresh cranberries
  • 2 tbsp orange zest (about half an orange)

Instructions

Roasted Cranberries

  • Preheat oven to 300 degrees.
  • Rinse cranberries and put in a bowl. Sprinkle with sugar and Cointreau and toss to coat.
  • Put cranberries on a parchment paper lined baking sheet and bake for 20 minutes. Let cool for a couple minutes until cool enough to handle.

Sweetened Roasted Cranberries

  • Place roasted cranberries in a small pan over medium heat. Add, orange juice (get your zest before juicing), sugar, agave and Cointreau to the pan and stir to coat.
  • Once the mixture starts to bubble turn down a bit and let simmer until the sauce thickens, about 10 minutes. Remove from heat and let cool, about 15 minutes. Can be refrigerated for a couple days or proceed directly to the final steps.

Sweet and Tart Roasted Cranberries

  • Put fresh cranberries and most of orange zest into food processor and process until no more big chunks (may require pausing and pushing down the chopped cranberries a time or two).
  • Fold fresh cranberry pieces into sweetened cranberry sauce and sprinkle with a bit of orange zest for garnish. Enjoy!

Notes

This is a recipe inspired from a delicious Bon Appetit recipe from 2005 that I have used before. Roasting brings a wonderful depth of flavor, the Cointreau adds delicious boozy hints, and the blend of fresh and lightly sweetened cranberries is a fantastic contrast in flavors and textures.
