Is it just me or is ramen a bowl of pure, delicious joy? Make this delicious ramen at home, with tofu, soft boiled egg, or some over the top pork!

Basic Ramen Broth
4cupsbasic chicken stock(make your own or store bought, veggie works too, mine is lower sodium so it can take more tamari!)
3tbspwhite miso paste
2tbsptamari(if you're using stock that has more sodium you might start with half the tamari or regular soy sauce if gluten isn't an issue)
2tsptoasted sesame oil
1eachscallion, sliced thin(optional)
1packageramen noodles(I use Lotus Foods Rice Ramen and it's fantastic!)
1eachpackage, firm tofu
1tsptoasted sesame oil
1eachscallion, sliced thin
1eachcarrot, sliced into matchsticks
4eachsoft boiled eggs(optional, try a 3 minute soft boiled egg, or sous-vide them if you've got it!)
1/4cupthai basil leaves(optional, I love a little thai basil in my ramen... not strictly authentic... but delicious)
Cut your scallions into thin slices. Cut your carrots or other veggies into matchsticks. Take the leaves of that basil off the stems. Prep any other veggies you want!
Basic Ramen Broth
Add chicken stock, miso paste, tamari, and toasted sesame oil to a pan. Bring to a boil stirring occasionally.
Using a whisk make sure the miso paste is fully combined (not just a lump in the pan).
(Optionally) add sliced scallion.
Turn down heat and let simmer for about 10 minutes.
While the broth is starting to cook bring a pot of water to boil and cook your noodles according to their directions (the Lotus Foods ones take 4 minutes and are delicious!).
Rinse with cold water and sprinkle with a tiny bit of salt and sesame oil. Set aside.
Cut your firm tofu into 1/4 inch cubes.
Heat a skillet over medium/medium-high heat. Add a bit of sesame oil to the pan and swirl to coat.
Sear the chunks of tofu 1-2 minutes each side, until browned, about 5 minutes total. Remove from heat.
Add your ramen noodles to a bowl. Ladle ramen broth over noodles. Add your veggies, scallions, herbs, tofu, soft boiled egg (or how about a mind blowing pork!). Finish with a sprinkle of sesame seeds and a drizzle of chili oil! Savor the pure joy!
SO FLIPPING DELICIOUS!!! So versatile, you can use whatever veggies you want, you can use meat or not, spicy or not, ramen is just pure goodness in a bowl. Not to mention the perfect companion to an icy cold beverage!
