Smoky Miso Rubbed Roast Chicken

Soul satisfying umami of miso and smoked paprika elevate this simply roasted chicken. Cooked over delicious rounds of sweet potato for an exquisite and simple meal.

Smoky Miso Paste

  • 1 tbsp smoked paprika (doesn't have to be hot, although that's an option too!)
  • 1 tbsp white miso
  • 1 tsp olive oil

Roast Chicken

  • 1 each roasting chicken (3 - 5 pounds)
  • 2 each sweet potatoes (mine were medium, basically we're covering the bottom of a large pan with slices...)
  • 1 tsp olive oil
  • 1 pinch salt
  • 1 pinch pepper


Smoky Miso Paste

  • Combine miso, paprika, and olive oil in a small bowl and thoroughly mix.

Miso Rubbed Roast Chicken

  • Preheat your oven to 450 degrees.
  • In an oven safe pan that can hold the chicken just rub the olive oil on the bottom to prevent the potatoes from sticking.
  • Wash and slice the sweet potato into 1/2 inch rounds and put in a single layer in the prepared oven safe pan.
  • Rinse and pat dry your roasting chicken. Sprinkle with a bit of salt and pepper. Toss a bit of salt in the cavity and truss the legs (tie them with kitchen twine).
  • Gently insert your fingers between the skin and the breast of the chicken, being careful not to tear the skin. Take half of the smoky miso paste and rub a good bit onto each breast underneath the skin where you just separated it.
  • Taking the other half of the paste rub all over the outside of the chicken.
  • Place the pan into the oven and cook until chicken is done, thermometer inserted into thickest area of meat (thigh/breast) should read about 165 (or whatever your preference is). This takes about 60 minutes give or take 10.
  • Remove from the oven and let cool a few minutes before slicing and serving over the sweet potato rounds. Enjoy the umami goodness!


Roasted chicken is about the simplest most delicious thing you can do. It is so versatile and can be paired with as many different spices and cuisines as you can imagine.
