Fresh Peach Salsa (or Persimmon Salsa)

Beautiful, bright, and fresh summer peach flavor. Great on pork, fish, or any taco!

  • 3 each ripe peaches, diced (Persimmons are a great fall/winter variation and other ripe, sweet fruit will work great as well)
  • 2 tbsp fresh cilantro, chopped (can substitute other fresh herbs, especially with other fruit choices)
  • 1 tbsp onion, finely diced
  • 1 tbsp jalapeno, finely diced (feel free to add more/less/other peppers to adjust heat)
  • 1 tsp grated ginger
  • 1/4 tsp salt (adjust to your taste and the sweetness of the fruit)
  • 1 each lime


  • Chop and dice peaches, cilantro, onion, jalapeño, and ginger.
  • Combine into small bowl and sprinkle with salt.
  • (Optional) if you want a little more hit of flavor a little lime zest goes a long way but not too much to overpower things.
  • Juice half of lime over the peach salsa. Taste and adjust seasonings, the salt and lime play against the sweetness of the fruit so a lot of times this requires a little taste to get the right balance.
  • Serve and enjoy or let sit a couple hours to let the flavors meld!


This peach salsa is actually a riff on my persimmon salsa (will post that in the fall when my persimmons get ripe!). You can use almost any ripe stone fruit. Different fruits will pair with different herbs, play around, enjoy!
