Spiced Cherries with Honey Whipped Cream

Macerating fresh summer cherries with a little sugar, cloves, and nutmeg, reminds me of the Pacific Northwest fall. Yet the spiced cherries with honey whipped cream are perfectly summer, full of flavor and just lightly sweet, a perfect way to end an evening... and not so bad with a bit of wine either!

Ingredients

Spiced Cherries

  • 1 cup cherries, pitted and halved
  • 1 1/2 tbsp sugar
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves

Honey Whipped Cream

  • 1 cup heavy whipping cream
  • 2 tbsp honey (or to taste)
  • 1 sprig mint (optional)

Instructions

Spiced Cherries

  • Pit and halve the cherries and put in a bowl.
  • Add sugar, nutmeg, and cloves. Stir thoroughly to mix.
  • Let the cherries macerate in the sugar and spices for about an hour (longer is fine). Stir a few times throughout this time to mix everything completely.

Honey Whipped Cream

  • Whip cream as normal to soft peaks.
  • Add honey to taste and whip to stiff peaks.

Finish

  • Grab a bowl add spiced cherries with honey whipped cream on top. Garnish with a bit of mint and enjoy!

Notes

Using the sugar and spices to macerate the fresh summer cherries adds a dimension to the flavor that melds perfectly with the rich, lightly sweet honey whipped cream. I like to put the whipped cream on the bottom and add the cherries and a little of their juice over the top and savor each bite!
