Le-Mint Mocktail (Lemon Mint Sun Tea)

This has been our go to mocktail for a couple summers now. Adding a bit of lemon to the mint and a bit of agave to balance it all out. That is one refreshing mint mocktail! Pour this lemon mint sun tea into a mason jar, over some ice, add a mint sprig and it just puts a smile on my face!

Ingredients

Mint Sun Tea

  • 10 cups water
  • 4 each mint tea bags

Le-Mint Mocktail (Batch)

  • 4 cups fresh lemon juice
  • 4 cups agave simple syrup (or half as much agave but will need to be stirred REALLY well)

Le-Mint Mocktail (Single)

  • 2/3 cup mint sun tea
  • 1/4 cup fresh lemon juice
  • 1/4 cup agave simply syrup
  • 1 sprig mint

Instructions

Mint Sun Tea

  • Add water and tea bags to a large pitcher (I prefer glass). Make sure it has extra room or you have another pitcher to split into as we're going to add a lot more liquid if you're making a batch.
  • Set outside in the sun for about 2 - 4 hours depending on how warm it is. Don't worry too much about over steeping, it's just mint!
  • Remove tea bags and refrigerate.

Le-Mint Mocktail (Batch)

  • Juice a bunch of lemons to get your 4 cups of lemon juice... there's lemon halves everywhere!
  • Add lemon juice and agave simple syrup to mint tea and mix thoroughly!
  • Pour over iced glass, add a sprig of mint and enjoy!

Le-Mint Mocktail (Single)

  • Add ice to a pint mason jar.
  • Add 2/3 cup mint sun tea, 1/4 cup lemon juice, and 1/4 cup agave simple syrup.
  • Close with a lid and shake to mix and chill.
  • Remove lid, add a sprig of mint and enjoy!

Notes

Okay, this one can go batch style or single serving, your choice. We basically have a pitcher of mint tea in our refrigerator all summer long so we can use in these bad boys... or whatever else strikes our fancy. Sometimes I add a splash of club soda if that suits my fancy. Of course, this mint mocktail has on occasion been made into a proper cocktail... add some light rum and think lemony mojito.
